fish taco question...

Making fish tacos tonight for a group of 6-8. Was planning on frying them but ended up with redfish. Should I stick to frying or would redfish be better blackened?

For a group of 6-8, blackened would be easier. But fried would be tastier (IMO).

I've had red fish fried and wasn't bad at all, you could do both as I would rather go with the blacked version. Sure would be easier? What kind of tortillas do you have?

Blackened. If fried you need a buttermilk type batter.

And as always the white sauce is the KEY to good fish tacos.

I always dust with cavenders and tonys then pan sear in some butter or olive oil

You prolly have a good slaw or something to go with the fish, a Mexican version with cilantro and a squeeze of lime sounds good.

grill the reds
mix blue plate and greek yogurt 50/50
shredded cabbage soaked in red wine vinegar
small tortillas
mild sliced peppers

Yes and slighlyt grill the tortious in a cast iron skillet. 15 seconds will do them, rest in a
Folded towel or tortia mitt if you have. They will stay warm and won't break when you fold them

Just don't fry it in anything seasoned if you're making tacos out of it.
