I have used them in the past to make pepper jelly, my own brand of hot sauce, dried some and ground them up for pepper flakes, pickled them on their own and sparingly with other vegetables like okra, green beans, etc. to give them a bit of a kick.
ETA: If you're worried about how it is in confined spaces like a kitchen to cook them, I can tell you it can get a bit uncomfortable for some people. If you have a gas grill with a side burner, you can do it outside.

Me too. I'd like some fermenting info. So far I've fermented sourdough bread, hot pepper sauce a few years ago which was awesome- like Sriracha. I would like to try kimchee but would rather some hot sauces as that's what I have in the garden.

Tewino kimchee is super easy just takes a little time which adds to the experience to me. I’ve done a traditional and a mango. I’ll link the recipes later if you’d like.

I had about a 1lb mix of jalapeno and ghost peppers. I thought, hmmm wing sauce.
I roasted them then put them in a pot with some Frank's and butter, immersion blender, whole deal. I didn't have a ton of Frank's so I ended up with maybe a cup of sauce.

I took a shot of Dave’s inanity sauce one time in college
We were about a c.unt hair away from taking me to the emergency room
So I’m done with super hot shite. Maybe put one pepper in a 5 gallon gumbo

In reality, they may have used a half a ghost pepper for a big batch of jerky. I know for a fact if you buy a 4 lb. eye of round roast, cut it up to make jerky and use a couple ghost peppers in the marinade and let it sit overnight, you WILL feel the heat.

I’ll look at the ingredients tomorrow to see if they have other peppers listed. You can see the pepper seeds and pieces on the jerky.

I've cooked with them before. The cooking process tones the heat way down. Still hot but nothing like eating one raw.
I pretty much maced myself the first time I cooked them. Had them on the stove with a lid. I think I was making a chili. Took off the lid and pepper sprayed my face.

I grew ghost and Carolina reapers last year. Holy shite those plants took off in July and produced until the first hard freeze got them in early November.
I have a shite ton of both. I froze two gallon bags each of them and I use them to heat up chili and what not. For the rest, I dried them because this time of year I can a crap ton of pickles. Both the dried ghost and reapers make great spicy pickles. I have also ground up both and use them like I would use chili powder (I threw that spice grinder away after).
No lie though. Either one of those will eff you up in a bad way. Them bastards are HOT and I love hot stuff.

These are varieties the place my wife picked the ghosts from had recently: ORANGE PEACH BOOTLA.. J"S LIGHT PEACH SCORPION.. YELLOW GUM... CHOCOLATE CAROLINA REAPERS... GATOR JIGSAW..
Are you familiar with any of these. I have heard of Carolina reapers obviously but I am not familiar with the others.

I just ordered some Carolina Reaper seeds to grow. Pretty excited, especially since they should be able to grow year round out here. Just have to figure out where to put the plants in our yard.

You will very likely end up with mutants.
The ones I grew had zero heat and were sweet like candy. Very unstable strain.
