First try at Armadillo Eggs.

For the Fourth we decided to try stuffed peppers. I know its late but a hurricane delayed me getting the pictures posted.

They aint pretty but came out pretty good.

The peppers were very good but a BBQ guy is always thinking if yall have any suggestions to make them mo betta I'd appreciate it

Those looked lots better than mine for sure and amy try a version of them We like shredded cheese more than cream cheese so may try a mix of them. We prefer fresh cajun sausage to breakfast. think we will use the thin slice bacon next time and prolly roll em in cajun seasoning we love the sauce but dont need the sweet. I looked at every picture and really enjoyed the post. Thanks so much and with tips from yours we will try again soon.

I really like them stuffed with boudin in place of sausage.

Now boudin would be worth a try or stuffed with boudin and sausage on the out side. The thin slice bacon would wrap neater but buy the wrights was good on my ugly ones

I like to mix in some hot pepper jelly in the cream cheese that's stuffed inside the pepper. Also...when it's almost done on the grill with the bacon crisp...I brush a light coat of my favorite BBQ sauce before removing from the grill. Delicious.

Thanks Walt that means a lot to us we have been blogging for lots of years and we enjoy hearing form readers its good motivation. It's just about the life of us ole folks from when we weren't quite so old to now

I've always made armadillo eggs with the following

spicy ground sausage patties (cooked)
velveta cheese
Jalapeno peppers

Stuff into a uncooked grands biscuit and fold it around all the ingredients to make a "ball" of sorts

Bake till golden.

Let cool.. enjoy for breakfast.

SOOOO GOOOD

I usta love biscuit bombs ad we made weveral versions of them but now that the wife is a celiac we have to stay away from the biscuits and do the grill ones. It will be time for a do over soon. The ones we amde were wonderful but chubby bbq guys lolve to experiment
