Your goto easy dishes or sides that taste good

When you're feeling lazy what do you go to?
Couple of mine:

Baked Potato
Pan fried asparagus

Canned green beans with a little butter and a little seasoning.
If im feeling insane, ill cook down some onion in a little butter with some tasso and then add the green beans with some seasoning and garlic and let those slow go on the stove. Ive always been a huge canned green bean fan. Fresh one are good too as long as they aren't crunchy. I hate when people dont cook fresh beans low and slow enough and they are crunchy and bland. You cant frick up canned green beans.

I go through zip lock bags like crazy, so I typically break the stalks off all at once (just bending the asparagus), throw them in a zip lock bag. Then I pour in a couple tablespoons of olive oil. Throw in garlic powder, salt, black pepper. Shake the bag real good. Throw 1/4 stick of butter in my non-stick pan on mediumish (6/10), then I empty the bag into the pan.
Doesn't take much work at all and turns out nice and crunchy. Probably cooks 6 minutes or so, I poke it with a fork to see when it's right.

Completely agree. I've worked in many kitchens from upscale to fast food and I love canned green beans with a little bacon .

I like to make penne and then add a jar of roasted red peppers, a few handfuls of baby spinach, and grated parm. Pretty damn tasty dish that I can have that ready in about 20 minutes.

I can tighten up a box of mac n cheese like no one's business. I use the recipe on the box, then add some grated cheese and some sour cream. The creamiest cheesiest mac n cheese ever.

I use fresh minced garlic instead of garlic powder and add fresh squeezed lemon juice. Occasionally a little Worcestershire sauce. Ideally it goes on the grill but I'll pan fry it in a pinch. Just a little squirt of fresh lemon juice right before serving is always a nice touch. Leftovers can be chilled, chopped, and added to salads.

Smothered sweet corn.
Brown some onions and Tasso / bacon in olive oil. Add the corn until it is slightly browned. Slowly add heavy whipping cream, small amount salt and pepper. Simmer....... eat dat!!!!!

I sautee a big cast iron pot full of onions, bell peppers, zuchini, squash, garlic, and mushrooms in honey on medium/high heat until they caramelize. Then, I add siracha to create a savory, spicy, sweet dish that is always a crowd pleaser.
If you remove the siracha and honey, you can instead add cheese and shrimp or sausage for a keto-friendly one-pot meal, or put it over angel hair pasta.

Cooked carrots: slice carrots in 1/2” round, add water in the pot til water just covers carrots, add sugar and some cinnamon and bring to a boil and then down to simmer for 20 minutes or until tender.. add salt, pepper.
Smothered cabbage: Render down a couple slices of bacon and remove the bacon and let drain on a paper towel. Chop a head of cabbage in a rough chop and toss into bacon grease, fry cabbage in bacon grease oh medium high fire until it turns golden and browns. Reduce fire to low, cover and let simmer, stirring occasionally until cabbage wilts considerably. Turn off the fire and crumble bacon slices over the cooked cabbage. Any salted pork meat can be used. You can also throw in some sliced smoked sausage or pulled pork.
Roasted Beets: Take a fresh bunch of beets and cut the leaves off approximately one inch from the top of the beet. Wash the beets thoroughly with a vegetable brush to remove any dirt from the skins and wrap each beet tightly in foil to prevent leakage of the beet juice. Place the beets in a cooking tray and bake at 400 degrees for an hour or until a fork can easily pierce through the beet.
Yukon Gold and Sweet Potato Mash
If you want to Double the recipe: Cook the potatoes in a Dutch oven rather than a large saucepan.
1 pound Yukon Gold potatoes, peeled and cut into 1 1/2-inch chunks
1 pound sweet potatoes, peeled and cut into 1 1/2-inch chunks
1/2 cup(s) low-fat milk
2 tablespoon(s) butter
1 teaspoon(s) brown sugar
3/4 teaspoon(s) salt
1/4 teaspoon(s) freshly ground pepper
Directions
Place potatoes and sweet potatoes in a large saucepan and add enough water to cover. Bring to a boil over high heat and cook until very tender when pierced with a fork, 20 to 25 minutes.
Drain the potatoes, then mash them in the pot to the desired consistency. Place milk and butter in a small bowl and microwave on High until the butter is mostly melted and the milk is warm, 30 to 40 seconds. (Alternatively, place in a small saucepan and heat over medium until the milk is warm.) Stir the milk mixture, sugar, salt and pepper into the mashed potatoes until combined.
