Just about any type of roasted vegetable or starch like potatoes is very easy for a fast side. I love roasted tomatoes as well.
Lately, I've been eating a lot of corn on the cob, sauteed corn, sliced tomatoes, caprese salads alone or with avocado and maybe some pesto.
I made two crab and corn quiches last night with sweet corn and jumbo lump. A slice of that with a caprese salad was outstanding.

Mix a can of Bush's baby butter beans, can of corn, Tony's.

This is fast and easy version of a dish I had in Brindisi, Italy. I make it as a side dish with blackened seafood.
You will need:
1 bag Knorr Alfredo pasta and sauce
2 cans smoked oysters in oil (olive if available)
Pinch of red pepper flakes (how much is on you)
Open the oysters and drain any excess oil but don't rinse.
Place them in a microwave safe container an mix in the red pepper flakes and set aside.
Make pasta according to directions, when done put the oyster, red pepper mix in the microwave for 11 seconds to heat the oysters, fold the oysters into the pasta and serve. Takes about 15 minutes to make.

I'd forgotten about those Knorr pasta sides. Years ago, I'd eat the parmesan side when I needed something quick and easy. It was pretty good for a bag and, of course, I doctored it up a bit. I may try that again for fun and to see if I still like it.
