Now that the season has come to end for me, it's time to get to cutting. Looking to invest in some good knives and it's been awhile since I've bought new ones. What are yalls favorite ones these days?

I've been liking my old hickorys. Cheap enough to not worry about destroying but takes and holds a good edge. LINK

Go to your nearest restaurant supply store and buy 6 boning knifes. They hold an edge and are easy to sharpen. Not to mention they’re about $8 a piece. If they’re good enough to be used in a professional kitchen daily they they’re good enough to cut up a couple deer.

Outdoor Edge

These are the knives w/ the detachable blades. They're razor sharp and when it dulls up, you can just switch the blades. I love mine. I have the full and smaller size.

I use a gut hook for skin, and any sharp knife for cleaning. A boning knife or filet knife to debone. As long as it's sharp I could use any knife to get the job done so I don't carry dull knives. If I can't shave with it, I don't need it.

Go buy the white handle knives at Sams. They are cheap, easy to sharpen and have great handles.

This. Get you a six inch stiff boner and a six inch flex.

Hone 'em up good and get after it.

I use an off brand fillet knife that my mother gave me one year at Christmas. It'll take an edge and is easy to resharpen.

Have a couple of dexters 6 inch boning curved knives. Works great. Have never tried the Outdoor Edge.

90% of my processing is done with 4 knives. I use a dexter Russel fish knife aka beaver skinner. Swept rounded skinning knife, very thin carbon steel blade. Will dull quickly but sharpens in seconds. Great for skinning but works really well for separating muscle groups. I use this knife more than all others combined.
Fish Knife


A flexible blade fillet knife is great for removing silver skin. Also really handy for making some longer cuts. I like this one but anything will do.
Eagle River Knives.

I like a little shorter thin blade for boning. I use this one just because I always have a few laying around the house. Blade is short enough to get in tight spots but long enough to make most cuts I'm looking for.

I like to slip in an Ulu occasionally but that is more of an acquired taste.

I love the raptor razor knife set. It’s ergonomically different I have the aluminum handles.

Dexter-Russel or Victorinox. They about the same price, get a curved one.


Someone mention the knives from Sam's. Those are actually pretty decent to, I bought one and they hold a good edge as well. Bakers and Chef is the brand.
