I'm going to make some pork carnitas with all the fixins and sides. I have some different sauces I picked up that I can't wait to try.

I've got two 10 lb. Boston Butts on the smoker that will be ready by game time. I woke at 2 a.m. to light the coals and by 3 I had the butts on the smoker with nice chunks of mesquite and hickory to supply the wood smoke. I've used this combo before and love the way they turn out.

When done, the shoulder bone will pull out clean as a whistle. The wife's going to the store in a bit to get some loaves of French bread for pulled pork sandwiches. Can't wait.

Started marinating wings 1/2 hour ago and will be grilling for game. Made a Greek yogurt blue cheese dressing Friday evening so it’s very well mixed at this point.
