Models that were bordering on or had achieved GOAT status before being screwed up by the next year model design.
I would like to nominate the Mitsubishi Eclipse.
Near GOAT Eclipse Turbo:
Not:
Any others spring to mind?

I'll do you one better and stick with Mitsubishi.
I used to really like the look of the Montero Sport:
(2004)
And now it looks like a big Rav 4
(2018)

Looks more like a CR-V

Yeah whatever, a shitty looking small affordable SUV. Same car in my mind
The Montero Sport used to have a small Land Cruiser vibe. Loved it. Now its trash.
ETA:
I do remember them being bad cars though, which is why my dad didn't want to get me one in high school.

Jeep Cherokee up to 2001.
Then what they called the Cherokee a few years later.

I am not sure there was ever, or ever will be, something as radically stupid as the Mustang to Mustang II frick up.
EVER. They really should have strung up everyone who worked on that project just to get them out of the gene pool.

Original Cherokee's were so classic looking to me:
And someone, somewhere, who I hope died a miserable death, decided to replace it with the Jeep Liberty:
Now it's back and looks like a wedge designed to hold heavy doors open:

I have no idea how it’s performed sales wise, but I loved the old truck based Pathfinders. Now it’s another crossover. I wish they would switch back to compete with the 4Runner
