Thanks for all the input thus far! This has all been very helpful, and please keep the suggestions coming.
Budget: Shooting for $10-$15K
What we like to do: Eat, drink and experience new things and places. And for this trip especially, put an extra emphasis on relaxing.
Pretty much what AbitaFan08 said - We want to take advantage of this special time to take a fantastic two-week trip that we'll remember forever. Of course, we'd love to be able to outdo this in the future, but the opportunity for an extended trip like this may not present itself again for awhile.
I didn't specify in the original post, but the places I mentioned are from the combined list of destinations my fiancee and I have discussed as options.
