I will NEVER criticize parish as a buisness..in that regard they kill it. They could get a line wrapping around the block for goat piss at this point. They market to perfection and they have given their key demographic what they want.... but as far as creativity goes... there is a lot of people ahead of them. I'm sure I'll get downvoted and told I'm wrong bc parish is GOAT etc etc... just my opinion

Sorry, didn't realize you were speaking specifically about Parish. Thought it was a general statement about all breweries.

Personally, I did not care for the SIPS series. But those batches were small 5bbl batches released every 2-3 weeks. Parish is bottling approximately 20K bottles per day of various brews. I don’t think they have additional capacity at this time & that is why they are outsourcing can production.

I've made some pretty good NEIPAs, but one thing I just can't seem to replicate is the nose on Ghost. No matter how many hops I squeeze into the fermentor, the aroma doesn't jump out of the glass like it does with Ghost. The flavor is there. Kegging one tonight that smelled and tasted great when taking a sample last night. I have a feeling that Parish (and other breweries) are slowly recirculating their beer through a hop back or torpedo or something similar so that that the beer gets the maximum amount of hop oils possible. I simply don't have that ability.

This is exactly what i've been doing with my NEIPA's. Been messing around with the water profile, grist, and yeast to find what i like. The answer, was Whole Foods Post Oak Hop Explorer 12. Man i loved that beer.

I really dont know of anyone that cares for sips...but they still sold the hell out of it... like I said...KILLER buisness

How are you transferring to the keg....scratch that, i'll bring this to the homebrew thread.

I don't see how anyone could disagree with that point. I could see an argument on whether it is better or worse but there is no doubt it is way different.

i posted about this a couple times over the years and i have the "I have been drinking it from the beginning" types say that this was a neipa from the start and i just dont believe that. Was he striving to be a neipa from the start, maybe. But it wasnt.
