Leftovers from a crawfish boil: diced boiled potatoes and crawfish, sautéed in butter and crawfish fat....with fresh green onions.

But I make ham and sharp cheddar as my standard “weekday” option.

Either bacon or andouille , jalapeños onions, bell peppers, cheddar cheese or seafood (shrimp or crawfish) onions, bell pepper, mushroom white cheddar, pepper jack or havarti

I had some leftover steak from last night. This morning cut it into small chunks, seared it real quick in some bacon grease, removed steak, did eggs, put steak back in with onions and sharp cheddar. Was amazing.
