Stingray = table fare?

I cranked one in on light trout tackle today and it got me thinking. My Vietnamese neighbor will eat anything that swims. He usually has a recipe or cook method that makes a white man's trash fish pretty decent. I wonder what can be done with a stingray as I think the meat is white.

Is it legal to take a stingray? Are there different species in Louisiana inshore waters? Any better tasting than others? What is eater size? Recipes?

Lots of folks cant tell the diffrence between a ray and a skate, while skate is not my favorite I have had it a few times.

People always say that it get subbed for scallops but I cleaned one a couple years ago, from Cat Island, and all I can say is it must vary by species. It was grainy, stringy, tough, and overall terrible.

I have eaten stingray in Singapore and it was very good. They skinned one side, cooked it, and you would eat the meat out of it. Its not alot of meat because its thin but I enjoyed it.

We were bowfishing in the surf on grand isle 2 years ago and somehow got a 60 pound stingray in about a foot of water. Scared the living crap out of us. We didn't want to waste it, so i looked up a youtube video on how to clean it and did my best. Thing had a ton of meat. So during our trout fish fry we battered the meat and fried it up and it was damn good. Wasn't chewy or anything, which was surprising. Caught a small one last year and cooked it the same way. I used to throw them back, but not anymore. Good eating imo.
