I would not mind seeing the JFK stuff in Dallas and eating Texan food but I heard negative things about Dallas for a tourist.
Dealey Plaza, where JFK was shot, is an interesting place. They have a museum on the 6th floor of the former Texas School Book Depository with a lot of information and artifacts and the window where Oswald was perched in enclosed in glass.

I would like to go to one or two of the national parks but without a car they seem awkward to get to which is why I was thinking of doing a tour to the Grand Canyon from Vegas.
When I went to the Grand Canyon I rented a car in Vegas and drove there. Stopped at Hoover Dam along the way. I don't really care for organized tours in general but you can definitely find one to the GC from Vegas if that's what you want to do.

Would Dallas be the choice for Texas then?
IMO, yes. But plenty of people would probably say Houston or San Antonio.

I have never even thought of Denver. How do the Rocky Mountains compare in Denver to Canada because I might be going to Canada in 2019.
IMO, the Canadian Rockies are way more scenic than the Colorado Rockies.

Is the Grand Canyon still worth doing for a day trip from Vegas? It would be a long day but it goes to the South Rim which is the best bit. Only $89 for a round trip.
The Grand Canyon is arguably the USA's most famous natural landmark. If you're going to spend three weeks in the USA I think it's worth a day to see at least some part of it.

I’d skip Colorado and hit up Jackson Hole/Tetons/YellowStone.
I would too if it's practical for the OP and he wants to devote the time and money to getting there.
