Dealey Plaza, where JFK was shot, is an interesting place. They have a museum on the 6th floor of the former Texas School Book Depository with a lot of information and artifacts and the window where Oswald was perched in enclosed in glass.

When I went to the Grand Canyon I rented a car in Vegas and drove there. Stopped at Hoover Dam along the way. I don't really care for organized tours in general but you can definitely find one to the GC from Vegas if that's what you want to do.

IMO, the Canadian Rockies are way more scenic than the Colorado Rockies.

The Grand Canyon is arguably the USA's most famous natural landmark. If you're going to spend three weeks in the USA I think it's worth a day to see at least some part of it.
