Except he pays the bartender a percentage of his SALES so as your bill goes up the more your waiter has to give to the busser, host, and bartender regardless of what kind of sales it was.

It's not "the system" when tip share varies from restaurant to restaurant and it isn't written down anywhere.

Typical gratuity for wine and spirits at a high-end place is 8-10%.
ETA: If you know exactly what the frick you want, then you can probably justify more, but like as not, someone is giving you good advice on pairings.

So if it's no longer the standard, why do you cling to it? not only that, but why so adamantly? That's what I find so funny about cheap people. It's not necessarily that they're cheap, it's that they proudly wallow in being so.

Your server probably has to tip a percentage out to the bartender for those drinks your not tipping on.

Because if there are no checks, the next "standard" will be 25%.
When I was a server, the "standard" was 15%
