Eh, for me it’s nicer to go to the store a week or so before and pick the prettiest, most marbeled steaks they have. Find some good wine to go with them. Then I take the steaks home and age them for a week or more, adding salt and pepper every day and changing out the cheesecloth.

Gets them so tender and flavorful, even more so than a good cut of meat already is.

Then I can have everything just like I like it. My time. My comfort.

Open the wine and enjoy the experience of cooking with my guests. And then enjoy their reaction when they take a bite. That’s what it’s all about to me.

this place is BYOB and it's awesome, 4.7 out of 5 on opentable, we will bring a nice bottle of PEJU cab or 2 and have a great dinner, $45 at the store as opposed to $200 in a restaurant LINK
