Currently live in Keller (north Fort Worth) and it's awesome but it's 100% burbs. My choice would be Marble Falls. Love that part of the state. If I could convince my city girl wife to take the plunge I'd be there tomorrow

Just so you know, the so-called river in downtown San Antonio is a ditch filled with water that pumps circulate. Not something you can float down and go over a few gentle drops.
For that near New Braunfels, there's a damned up river with a concrete slide and a huge catch pool.
San Antonio is neat and the old Churchs are very impressive in winter when the tourists disappear.
Downside: it is a hispanic city and you should try a week there off season before committing.
If I were going back, I couldn't handle the heat and population of Houston. Up on the high plains, the people are nice, the weather is four seasons and I'd probably end up in Lubbock or Amarillo.

What's not "family friendly" about great public schools with zero culcha that you don't have to worry about sending your kids to?

If so, sounds like a good idea.
If not, are you aware that San Antonio is majority Hispanic? It feels like living in a foreign country to some extent if you are not one of them. When I lived there it felt like I was a stranger in a strange land. You may like that aspect though. To each his own, but you were warned...
