Well not all of us had them cast irons skillets.
I averaged 2-3 pre tester burnt pancakes before the keepers hit my plate.

Never got that brown perfect looking pancake to start. It took a few trials to find my pancake mojo.

it's beautiful
Always start with your heat at medium and a copious amount of butter or spray in the skillet/pan and you'll never burn a pancake again. just slowly lower it as it gets hotter and hotter and keep applying the lube.

I always have trouble with eggs sticking in mine... Maybe I don't use enough lard.

If it sticks then it ain't seasoned enough, my friend. Cover that bitch in oil and light her up.

quote:you put the batter in the pan and all of a sudden your wife walks in the room wearing lingerie. She tells you to come to the bedroom. After the smoke settles from sex, smoke from the kitchen creeps underneath the door of the sex room. Thus, you realize your pancake is burnt and it's your wife's fault. As always....

They are my mom's old ones. They were a little worn (rust spots) when I first got them from... I cleaned them good with a wire brush.. then wiped them out.. coated them in bacon grease and baked them four about 3 hours... I did that about 4 times. Since then I've used them quite a bit...
They are pretty damn smooth... I think I'm not using enough oil.

You probably have it too hot as well. Try lower heat at first then bring it higher after you place the egg(s) in it.
Don't be in too much of a hurry.
I cook almost exclusively in cast iron.

Probably not.

Coat of oil or bacon grease, nothing sticks. That's 101.

Back in the before time, everything was scrambled... even the pancakes

We'd whip out the ole griddle for the pancakes.
