Brother Martin Alumni - Crispitos

My wife and I have been craving these things for a while now(Dominican apparently had these too), so I decided to take a crack at it. Found a couple recipes online for crispitos that sounded and looked similar to the Mall classic and kinda came up with my own process that came out pretty damn close to the real thing without having to deep fry them. I know this may sound a look gross to some people but trust me, they are delicious.
This recipe made 8 crispitos which were all eaten by the 2 of us.
- 1lb ground meat
- about a cup of diced onions
- taco seasoning packet
- 8 large tortillas
- nacho cheese or queso (if you wanna go classy)
- sliced pickled jalapenos
- Set oven to 400
- Brown meat in skillet, remove and set aside
- Cook onions till slightly browned
- Combine meat, onion, and taco seasoning in food processor till texture turns into almost a paste
- Cut tortillas in half and form about 2 tbs of the meat mixture in a log on the wide side of the cut tortilla (see below)
- Roll up and place seam side down on greased baking sheet
- Once they are all rolled, spray generously with vegetable spray
- Cook in oven for 15 min.
- Top with cheese and jalapenos
- Enjoy like you're 15 years old again

God I ate way too many of those.
You can buy them. I'll have to ask my friend but the Bulldog had them for a little while. They have some alumni workers and we actually found the exact product from their food distributor. You had to order a lot though. Something like a box of 100

I loved those things in my Catholic High days. They would come 2 to a box and I used to buy two boxes and just go to town on them.
If I remember correctly, they had nacho cheese and chili on top. Can anyone from CHS confirm this?

Ours was chili and cheese with any salad bar topping you wanted. I just added jalapenos.
Some people were piling so much shite from the salad bar on it that I think they started charging people for salads.
I sometimes ate those things 3 times a day. Senior year Wednesdays was expensive

Can confirm.
Crispito day was the best. Came with cheese and chili and a pass to skip next period because you were going to be in the shitter for at least 30 minutes.

Wednesdays were the greatest/worst day of the week. It made for a long practice after school.

The ones at the bulldog were similar but lacked the same recognizable flavor. Plus they were like $6 for two.
I remember when they dropped the hammer on the toppings. Some guys were getting away with a pound of lettuce and tomatos. I was never a fan of mixing lettuce with nacho cheese.
I bet we were at brother Martin at the same time.

I loved those things back in the day. I always ended up getting 4 of them every Wednesday with the chili and cheese. Then, I would tear up the bathroom

They did have both on top.
Brother Barry brought them from BMHS to CHS.

Memories! Any of you baws compete in the contest. One of my greatest memories was someone blaring eye of the tiger on a boom box while guys were trying to stuff as many of these down as possible. Also as long as I live I will never be able to find a chicken tender basket as satisfying as I did on tuesdays.

At the beginning of the year after the switch to white shirts, there was an impromptu assembly in the mall. Evidentially the administration did not consider how much khaki masked the Chispito cheese smears on the uniforms over the years. The message was basically quit being a bunch of savages while you eat.
