$15K and buying a used FWD/AWD, what would you buy?

Going to use it for when bad weather hits because I would rather them hit that than my primary, going hunting (nothing deep woods), and going to the range. I won't lie I would use it as a bug out car if ever needed.
My thoughts so far are an Xterra or some kind of Subaru.

AWD has actually grown on me a lot. Got a 2010 Yukon Denali so it's very different than a Subie but I love the AWD. You rarely have to worry about breaking traction in wet and have the extra control in bad weather.
I will say this though - my truck chews through front tires like crazy.

80 or 100 series Land Cruiser.

2005 or newer xterra. 100%. I have 180k on mine. Runs like I first bought it. And it will get thru anything off-road. Off-road model also has rear locker. So... you can go deep woods all you want.
There is no better bang for your buck both for reliability AND off road capability. Unless you just unluckily get a lemon.
You'll also really appreciate the hard flat surface that you get when all seats are folded down. Frequently.

Although It's not my favorite vehicle, I will admit that you can't kill these things. My wife drives an 01 model with 250k miles on it and it just keep going.

Two years ago I bought a 3.3 xterra 4x4 with 100k for 3800 bucks.
Now, with 200k on it, has been an awesome vehicle.
Looking for another 3.3 now. The later models had issues with radiator leaking into the transmission. If caught in time, just replace the radiator every 90k miles.
I stopped driving our newer 4runner when I got this one, sold it.
On the hunt for a tracker 4x4 at the moment.

This. I have a 2011 and I will drive it until it dies. Put in an aftermarket touch screen head unit with CarPlay and a back up camera in it and you are good to go.

If you can dig up an extra 2k, I have a 2000 LX470 with a TRD supercharger rolling on 33" Toyo ATIIs for sale. Firm on $17k. There's maybe a handfull supercharged ones in the country. Check out the classifieds at ih8mud.com if you have any interest in land cruisers.

You're as bad as my wife about this. I use car, truck, van, and jeep to describe vehicles. If it is a pickup, an SUV, or most crossovers, I call it a Truck. Car is self-explanatory. Most Wranglers and CJs I call a Jeep. JKU's get lumped in with Vans where they belong.

Obviously both are really good choices. I have a 2017 4Runner Off Road Premium and it is as capable as your going to buy off the lot (sure jeeps are great but they are definitely lacking in the *polished* dept). But for $15k your are going to be buying really old and probably really high miles too...
So again, unless you have a friend that is selling a 4Runner or Landcruiser super cheap, I would get a really good condition Subaru Forester.

Xterra is one of the few body on frame Suv. It is a beast. Get a late model 4wd
