interesting.. what do those taste like?
Posted on 3/10/17 at 10:28 am to LSUvegasbombed
I wouldn't say they have much "taste" as much as they just bring some heat. I think they're about 10 times hotter than a jalapeno, for reference.
I saw someone posting about them in another crawfish thread, so I bought them to try them out. While tinkering with the recipe, just going to throw it all at it

Has anyone ever heard of putting ice cream salt/rock salt in their boil instead of just the regular salt containers?
Some old cajun told me he uses Chackbay and puts a 4lb box of the ice cream salt/rock salt in his batch.
I was like...wtf. That seems like a lot.

No chance. I want someone else to do it.

My PawPaw, the most coonass person you'd even run across used rock salt. O
Posted on 3/10/17 at 3:57 pm to CHEDBALLZ
Yeah this guy is extremely coonass.
And he's from...Chackbay. Still lives there.

i was at maxwells last night getting some chops.
One of the guys working there apparently does the salty dog method for boiling crawfish. I have never heard of this method but apparently its some of the best crawfish around.
The gist from what i gathered is he makes his own seasoning then he boils them in seasoned water. Then puts them in the cooler and "salty dogs" them down with his seasoning until it evaporates off the shells.

I use kosher salt. Taste much better than table salt.
I also don't care for Chackbay.

Yah this is what Lafayette and most of the Acadiana region do. Its steaming them instead of soaking them. There's a rather large debate on which one is correct, but I'm team soak.
Last year I tried soaking for 25 and then steaming (and shaking more seasoning on them) for an extra 15. Came out good, but not really worth it

Crawfish house in Houma makes their own blend. I've won boil offs using their stuff.

Im from Acadiana and we dont put no seasoning on the outside of the crawfish. Thats for people that dont know how to boil crawfish. Let em soak and you dont need extra seasoning. When you break a pincher and can pull the meat out of it without cracking the shell, they cooked to perfection.

But then you have to deal with that jackass owner and I'd rather stub my toes on a dresser in the middle of the night than deal with that arse clown.

What size box of salt are y'all talking about? Can you post a pic or the quantity? Sorry for the stupid question but I've always just used boil with salt already in it and I'm interested in trying this stuff too.
