Nest? Honeywell? Ecobee? Something else?
Which one and why? Which Honeywell if that one? Preferably something I can control with Apple/Siri. TIA

nest - better since they fired tony
ecobee - the current darling because of the included remote sensor
honeywell - still God Emperor for the cheap bastard under $100 club.

Voice control? all of them.

I have Emerson's Sensi and I love it. I've had it for well over a year now and it is really great. I got it cause it basically works with any type of wiring you may have to your HVAC so for someone who doesn't know what they are doing, it only took me like 15 minutes to install.

Also works with Alexa if you have that. But the cell phone app is super easy and great.

I just bought this:

I love it.
I was looking for the cheapest wifi thermostat that would integrate into smartthings and google home natively that had a humidity sensor in it. This met the criteria.

I just put the Honeywell t5 lyric pro in upstairs and downstairs. It has geo fencing which is a nice feature. I have been extremely pleased with them. They were the only thermostat that works correctly with my zoning system which is Honeywell also
