I suspect Andrew has an idea of how his beer should taste. Not every batch is going to taste exactly the same, and he will taste each batch and try to tweak it to get it to taste exactly the way he wants it.

The yeast evolves over time, so they will have to continually tweak things.

To your point, the last batch, though delicious, was significantly different. But to my point, people have been complaining about inconsistencies long before that batch. They are trying to fix it with this new yeast. The next batch will probably be different than any of the batches preceding it. People may like it better than all of them. I don't think this change in yeast is going to end the inconsistencies, though, but it may smooth them out a bit more...

Hope to get out to Parish soon and pick up a few others. Was in town the other day but it was a Sunday. Closed. Tried Rev for the first time and it was really good. First thing in the morning good.

if the yeast was the problem and they stick to the same recipe, why would this beer continue to be inconsistent?

Happy Birthday!

2BD is an Off Color Apex Predator. First time trying this that I remember. Very good. It is a hoppy Saison with a little tartness to it. Nice banana and citrus and apple flavors with a little funk. This is a winner.

Picked up some of the 12/21 Envie from Breaux Mart. It's certainly hazy, but I don't actually taste much difference than the October/November/early Dec batches.
