Just remembered I had a conversation with one of the owners at Frey's and he said they are cooking night into day and throw out any overages at the end of the night.

I'll never waste my time with this clown. Playing games in an attempt to get people to line up for his Que. He's trying to create this false demand by running out so early then throwing shade at everybody else.

That's what he is saying. I eat Blue Oak for dinner on the reg, so I'm not sure I buy that argument, but I guess we will never know.
...and lets be honest...do we really want to go to that location at night? Just don't sellout an hour after opening.

I've been in NOLA and seen McClure pulling meat off the pit @ 5pm. Maybe they have figured out how to put more meat on a pit when they remove some.

They really aren't though. On Fridays and weekends they have, but plenty of days they are open a lot later with food.
As for burnt ends, you can't cook just burnt ends. You have to cook the whole brisket to get them. I understand running out of them and not cooking 40 extra brisket just to satisfy an insatiable demand. Especially if they are just going to throw out the rest.
To me, he would do better jacking up the price of burnt ends to keep people from poaching them and turn a ton of profit.

That guy ever hear of Alto Sham Warmers. Franklin holds his briskets in these from about 2am til he sells out, usually about 12hrs later. Why not have product that gets done in shifts and use a warmer to hold items til supper service?

It could be that our last bbq meal was in Texas, but we were completely underwhelmed on Saturday. Hardly any smoke and pepper flavor...
We have been to almost every famous place in texas and tennessee (except Franklin)...this place is not even close to that quality. As far as nola goes, it was way behind our favorite spots. Our sides were a very good though...
There was some douche in an LSU visor licking the chefs balls...telling him how awesome he is. His girlfriend/wife was clearly embarrassed. He was acting like a high school girl in his adoration. That was fun to watch at least...
We have tried and liked one of his previous places.
We have been to almost every famous place in texas and tennessee (except Franklin)...this place is not even close to that quality. As far as nola goes, it was way behind our favorite spots. Our sides were a very good though...
