you will definitely bloat up some after coming out of ketosis. For most people, a keto diet goes beyond simply being a way to lose weight, but their actual diet from that point forward. I'm currently eating carbs, and only a few pounds heavier than where I was before coming off of the keto diet.
I find once I start eating carbs again that I tend to binge eat them, but I was obese and didn't only have "20 extra pounds to lose" so it may not be as bad for you. I still stick to an IF schedule for eating because it helps me maintain my weight when I'm not eating keto (keto is tough when dating and going out regularly )
If you're only doing keto to lose a few pounds and then go right back to your old habits then you'll probably end up with that same 20 pounds to lose again after a few months unless you're really sticking with your "balanced diet with less calories" plan. but the water weight gain/loss is real when adding/removing carbs from your diet.

Read up on eggs. They are your friend on keto but like anything, over do it and you'll tire of eating them.

I've eaten 2 hard-boiled eggs and a black coffee every workday for breakfast for the past few years. It does sometimes get old.
To mix it up, scramble them with butter, chives and a little parm cheese.

Whatever works for you. I try to stick to nsng, but food can be awesome. What's the point of life if something makes you miserable all the time?

It's about finding what works for you and what you can live with. At times, low carb lifestyle sucks but not as much as obesity and diabetes would. Like everyone else said, not believing in what you are trying to do will make it very difficult to succeed.

To satisfy the hunger you will get from all the lean meats, you need to throw some fattier protein in there, eat some steaks. homemade burgers with a fattier profile. Nuts, nuts, nuts that's what she said. They'll keep you feeling full.

My wife and I have been following a modified Paleo diet since July and we feel great. We've also been working out 3-4 days a week. The diet is pretty easy for me since its the way I already eat. No bread, grains or sugar has been a little rough. I'm not a big milk or dairy person so that was easy.
My wife is/was a huge cereal and milk person so that's her hump she needs to get over.
We eat all the meat and eggs we want which is the best part.

determine your target macros/deficit using the ketogains calculator. Use an app like myfitnesspal and track your meals.
You're going to want more fat than your sample menu.
Mix in some chicken thighs instead of breast. Eat the whole egg. Use coconut oil, avocado oil, ghee, etc for cooking.
Carrots aren't a keto friendly food.

As far as OP's menu, looks good. (didn't want to post twice so i'm just doing it here)
Red kale is higher in carb that other varietals.
And there are lower carb veggies than squash, but that's nit picking.
add bulletproof coffee. make sure to get lots of MCT oil. Same goes for electrolytes.
I recommend green tea or water with lemon, a shake of No Salt (potassium) and a shake of iodized sea salt.
it's actually an easy "diet" to follow even if you don't believe in it because you won't be hungry or bloated.

Ideal protein is absolutely awful for you. My wife just did a rotation for Dietetics and most of the patients/customers just end of gaining the weight back pretty quickly. Not to mention the first month is basically designed to starve you. Youre not supposed to workout at all in the first month.
Also have a friend that has almost had to have his pancreas removed twice because he lives on the Keto diet. obv youre not supposed to live your life on any of these diets so thats part of it.
