Dinner for 40

I am one of those guys who takes pictures of my food and posts them to social media... well my high school's booster club contacted me and said they love seeing my food and wanted to know if I would cook the team's pregame meal served Thursday night and then talk for 10 minutes about playing ball and how it helped shape me as a person, etc. I'm all in and honored to do it, have the skills to do it, etc.
These are my options--
1. Smoked 1/4 chickens, mashed potatoes, green beans, salad, bread. (Smoker space is a concern)
2. Spaghetti and meat sauce with chicken parm
3. Pulled pork with mashed potatoes, green beans, salad, bread
4. Jambalaya, salad, bread.
3-a varsity football team in east Texas. What do you say guys?

All sound good. Just to clarify, the football players will eat this meal, then go play a football game?

They eat a team meal Thursday night--should have clarified this. Game is friday.

I make a fantastic jambalaya--smoke the chicken, pork, and sausage. Going to need to get two larger pots though.

#4. Those kids will enjoy something different. (This is assuming someone besides you is cooking a meal each Thursday eve.) They have probably had chicken, spaghetti, and some form of BBQ (Texas) already.

If you do the pork, you might want to have a chicken option in case there are boys who don't eat pork. Also, if you do the Jambalaya, and you use shrimp, there may be some boys who are allergic to shellfish.
