The white sauce they serve with it, is it a white remoulade? Have some gator that I am going to blacken this afternoon and want to pair it with the same sauce. Thanks!

Whatever it is has creole mustard in it. Maybe creole honey mustard? I've often wondered myself because it is damn good.
