Yellowfin Tuna Filets

My brother just gave me about a half dozen fresh filets that were caught today.

Any suggestions/tips for cooking with a cast iron skillet on stove?

And what's everyone's favorite way to prepare it seasoning wise? Any marinade needed?

Have some pepper corns, and almost all the basic seasonings.

Don't cook tuna often, so any advice would be appreciated. I do use my cast iron pretty regularly for steak though, so am familiar with searing and finishing off in the oven (if the techniques are similar).

Salt pepper screaming hot cast iron and don't cook it too long

I like a dipping sauce made with ginger ale, honey, soy sauce, garlic and red pepper flakes and a homemade wasabi aioli

Pepper, salt. Sesame seed oil in a smoking hot skillet for very little time.

Press one side into toasted sesame seeds and sear that side down on not too high of a heat otherwise the seeds will burn. Flip over and sear the other side, serving the sesame side up. Serve with lime garnish and ponzu sauce. Do not overcook unless you like cat food.

If you like sashimi, dip it in soy sauce and let it melt in your mouth.

Lightly dust with flour and then smear wasabi on both sides of the fish, then sear it in a black iron skillet on high for a few seconds on each side. If you want a dipping sauce, go with soy sauce and a touch of honey.
