Decided to give the new Instant Pot a shot at the Monday red beans. They turned out pretty damn good. See below.
First I used the Saute function to cook down some store bought trinity.
I did soak my beans beginning in the morning for about 8 hours. I added the beans, a ham hock, 3 bay leaves, some red and black pepper, garlic powder and worceister to the pot. Then added some chicken broth and some water to cover the beans.
I set the pressure cooker for 1 hour. The beans were cooked after only 1 hour. This is how the looked when i opened the cooker.
I took the bay leaves and hamhock out and took some meat from the hamhock. I browned some andouille on the stove and added the ham and sausage back to the pot. I changed the setting to saute and cooked the beans down for a few minutes.
Finished product. I did not taste any real difference in this method of cooking my red beans.

Looks good.
I've done a black bean and turkey chili with the IP but haven't done red beans yet.
May have to turn up the air this weekend and give it a shot.

I'm going to try red beans in the instant pot this week.
Can I brown the sausage in the pot first and deglaze with trinity before adding the beans and pressure cooking? I'd rather make this a one pot meal than use OP's method.
Anyone else do this in the instant pot?

I totally flubbed my initial red bean attempt. Didn't soak. Didn't put enough water in. Forgot to seal the pressure release. Only thing I didn't do wrong was burn the veggies when I sauteed them.

Looks great! Always wanted to get back to using our pressure cooker, just seemed like a pain but it was an older one.

Looks great, making me wish I would have picked up an instapot.

I like them all but i prefer more liquid. Tonys Seafood in BR are probably my favorite

I went home at lunch, browned off some sausage, onions and garlic and filled my instapot up with them, some beans and chicken stock, sealed the hatch and set it to 5 hour slow cook. But now that I'm thinking about it I didn't leave much room for bean expansion. I really don't know how that's gonna work out....

Damnit. That's what I was afraid of..

I exit the house when the instapot releases the pressure. I dont need to die at the hands of some delicious red beans

Off topic, but where has LouisianaLady been all summer? I haven't seen her posting.
