re: Are female crabs less desirable?

I've been told by a crabber that 99% of all the #1 crabs caught in LA are sold to Maryland because they simply can't catch enough in the Chesapeake Bay area to meet demand and they're willing to pay obnoxious prices...
I don't know about 99%, but the rest of the statement is true. Back in 94-95, I was working at a crab house in Venetian Isles just off the Chef Pass ... the main operation was the steaming and picking of the meat ... but EVERY SINGLE #1 CRAB that we bought got shipped overnight to Bethesda, Maryland. Now while that may have been 100% of our crabs from that house, there had to be more than 1% of the total Louisiana catch staying in state.

I couldn't argue with that, my estimation was mostly hyperbole. We had a guy(RIP), that had the camp next us in Venice and he was a commercial fishing jack of all trades and a master of all. He'd crab, catfish, gator hunt, shark fish, whatever was the most accessible/ profitable for the season. He said 100% of his crabs left the state but, like you said, I can't imagine there aren't a few that stay here. Having said that, I can't think of any place in LA where I could get a whole #1 if I really wanted one. The crabs they catch near Lake Maurepas/ Manchac are certainly contenders for #1 status, maybe some of those stay here?
For the purposes of this thread though, #1 males then all the rest. No difference in taste between the two but females seem to be more predictably full. All crabs are delicious and that's something I don't think anyone would debate...

Had boiled crabs twice over the past few days and found the females had more meat than the males. The meat also had a slightly firmer texture than the males but I actually preferred it.

Males are better to harvest if you're looking at it from a sustainable fishery point of view. Females taste better, imo, so I can see why markets are always full of them.

Are you serious? I can tell you places to go get them. They might not be in a place convenient or desirable for you to venture to,and they definitely won't be a price that you like, but a LOT of the number 1's stay in Louisiana. Maybe not half, or even 25%, but more than 1%.

In the very post you were replying to I admitted that my estimation was mostly hyperbole. Then I made the comment that I couldn't honestly think of a place I know that regularly sells them besides the hampers we used to get in Manchac some 25 years ago or Bucktown back in it's heyday. I'm not trying to be right or ridiculous, I've lived in Houston for the last 5 years so maybe I just need a refresher. Where would you suggest one would go to find them?

I'd say they tend to me crabbier.

Crab fat is an amazing flavor booster in shrimp spaghetti.

First place I would call to get them would be Castnet Seafood in New Orleans East.

The #2s were $40/dozen, what're we looking at for #1s?
Posted on 6/26/16 at 9:16 pm to Gaston
$40 a Dozen? Hell, i can get No. 2 females right now for $3.99 a pound at the International Farmers Markets here in NE suburban Atlanta ... no No. 1's tho ... all No. 2 females and males. When they're weighed up it's definitely no more than $20 a dozen. Hell, 2 crabs to a pound would still only be $24 a dozen ... and these are Louisiana crabs trucked in to Atlanta.
I can find out what Castnet has right now and let you know.

They're in a big tub/bin and you pick your own with a pair of tongs. By the pound ... that's how the fishermen are paid for them, so they just mark up the price. Crabs aren't priced by the dozen until they reach the consumer, and it seems as though only along the Gulf Coast.
I've seen them like that at Buford Farmers Market, but I get them at Nam Dae Mun(I live in Gwinnett). I also see them at Assi, H-Mart, Great Wall, and DeKalb Farmers Market.

Fixed it. Damn autocorrect. I hate that sh!t. It makes you look like a dumbass in order to dummy-proof texting for people who actually don't know how to spell.

Unclebuck of the place you mentioned who usually has best selection. Looking to boil some in a couple weeks
Posted on 6/27/16 at 1:21 pm to Gaston
I prefer the females considerably more that the males. Fat and eggs.

I usually go to Nam Dae Mun on Shackleford and Steve Reynolds. I also like the Assi on Pleasant Hill just off of 85. No one particular place is going to consistently have better crabs than the other, but those two seem to have overall better seafood departments as to quality, freshness, cleanliness, and service.
Super H-Mart is okay, but i don't always see crabs there ... they seem to focus on the exotic stuff for particular Asian dishes.
Places i stay away from when it comes to seafood: Great Wall on Pleasant Hill, and Hong Kong Market on Jimmy Carter (i go to Hong Kong for other things, but NOT seafood).
Buford and DeKalb are both good as well, they're just a little out of my way and tend to be more expensive.
