Don't lift the lid on the jambalaya pot after you reduce to simmer
Got my hand whacked with a wooden spoon many times for breaking that rule

Why no bay leaves?
My question is why bay leaves? I've never understood the need for them.
They don't mesh with the flavor I'm going for in my gumbo. They're not necessary and I don't care for the flavor they impart in that dish. I love bay leaves, though. I use them quite often in other things.
