I like Bayou Teches label the best of the three.

The last batch of their Quantum Hop was actually really good. That's the beer that they brew with different hops each time, but it's only been done twice so far. The problem is that they don't date the bottles or otherwise mark which batch you're drinking and they don't advertise what hops are used in each batch. That's a pretty critical component for a beer like that. If it's too expensive to have a label for each batch, then at least put a QR code on it to direct people to the website so they know when it was bottled and the specifics about the beer.

Didn't realize it was different recipes, I thought the first batch wasn't great so I didn't bother picking up the second.

This. I bought 2 bombers when it first came out. Thought is was ok. I've definitely had worse (Rodeo Clown).
However, if they since fine tuned it to taste like fresh Space Cake, then I'll have to pick up more next batch.

They confuse the hell out of me. The only word I can really think of to describe them is whimsical. Then again, I'm not privy to any of their internal logic; I'm sure there are reasons behind what they do.

They also own crawfish ponds and seem to enjoy the simple Arnaudville living. As a result, as long as they're making money (which they do, the brewery is a party on nice Saturday evenings with food and music), I think they just prefer to brew whatever style and ingredients peeks their interest.
That's why I enjoy talking with them. I don't know jack shite about brewing beer, but I can tell they're having fun just doing whatever they want to do. Last time my pops and I went to the brewery, they were out there roasting a whole pig over a hole in the ground.

I admire them for just doing their own thing also-but, it makes me think that it probably doesn't take a ton of skill to make money brewing beer in Louisiana. There are so few breweries and a lot of demand.

can't really blame them. When they hit on beers they tend to be really good albeit niche styles.

I almost brought up tin roof in that post. Seriously, make a blonde beer, an amber, a weak ipa, name them "honey badger blonde", "The Hat", "Les Bon temps", etc and put em in purple and gold cans and people will buy it

Parade Ground Porter is a good beer, rest is pretty meh. I think the only three that I trust to hit more than they miss are NOLA, Parish, and Great Raft.
