Milwaukee is actually turning itself around. The redevelopment/master plan for the city looks great.
Anyway, if you're into brewery tours (I'm in the camp that finds them boring -- all the same), do Lakefront and/or Miller.
If you're in Milwaukee early that week, the Brewers will have a home-stand with the Cardinals on Monday, Tuesday, and Wednesday.
If you're into museums, check out the Harley-Davidson Museum, Milwaukee Art Museum, and Milwaukee Public Museum.
If you're looking for areas to explore, dine, etc., I would recommend the Third Ward and Milwaukee River Walk. Screw Marquette, but you can walk around their campus.
A popular "area" for bars downtown is Water Street.
If you will be in Madison prior to the game, you will notice that campus and downtown are intertwined with one another. What I mean is that they are distinct areas, but you have the ability to walk between them. Stroll up Bascom Hill and look back toward the Capitol. Head up State Street to Capitol Square and head back down.
Having grew up and gone to college in Madison, there are plenty of great dining/bar options. Let me know if you want any suggestions.
I don't spend a whole lot of time in Green Bay, but Appleton has the best nightlife in that Northeast portion of the state. Appleton is not too far from Green Bay and there will be an abundance of fans, from both sides, staying there, including myself. On Packer Sundays, you will typically see a lot of bars having shuttles up to Lambeau. I would expect, for a game of this magnitude, that will hold true on this Saturday.

Downtown Green Bay has actually turned around quite a bit. There has been a lot of development on the riverfront down there along Adams Street, with new places going in, and it should be a fun scene that weekend. Also, the bars on Holmgren Way right near the stadium should be jumping Friday night. We'll most likely be in the area around the stadium.

You'd have a blast in Milwaukee. It's a great bar/drinking town, and the people are super friendly. I live in Chicago, but when I go back to Wisconsin the people are so friendly it almost catches me by surprise.

For the golfers, a bunch of these are accessible on the way to GB from Chicago. All the Kohler/Sheboygan courses, the Lake Geneva course, Oneida/Thornberry Creek...

Flying into Chicago on Thursday
Cubs game at Wrigley on Friday
Tailgating all day around Lambeau and LSU game on Saturday.
Maybe a round of golf on Sunday.
Fly home on Monday.

We have a group of 6 motor homes going up through Memphis, St. Louis, Chicago, ( Cubs game on Tuesday night), tour upper peninsula, then Green Bay. Going to have a blast.
