my guess is that a cucumber resembles a snake to cats and their evolutionary-bred reaction is to go hyper defense

i believe they think the cucumber is a large turd deposited by something large enough that they don't want to meet it, so they run.

You are correct. Most animals are genetically hardwired to be fearful of snakes and the's, anything that resembles a snake. Primates show a more pronounced fear reaction to a curved or wiggly stick as opposed to a straight one which less resembles a snake.
