I like red or black beans in my chili. Grew up eating it that way so always make it with beans.

All I've ever used and all my mother used and she cooked a great chili. Get the meat chili grind which is a coarse grind.
I got second place in a chili cook off in Snowmass circa 1986 with Mexine, coarse grind meat and canned red kidney beans. I use a lot more than it recommends and I use the recipe on the back of the jar.

I make chili about four different ways, only one of them is without beans. It's the one that starts with cubed beef, and I know some people here don't like that.
