We don't know that unless multiple people survive to tell the story. Otherwise, it's just Lou Solverson's account of what happened, which could be inaccurate due to the fact he was being choked nearly to death during the event.
And yes, Peggy's comment was gold. "It's just a flying saucer, we've got to go!".

That makes sense, except that if there were helicopters there, it would be easy to determine that after the fact. If Lou years later still thinks he saw a UFO, then whatever he actually saw should not be so easily explained as having helicopters there. It could just be an outright hallucination or, as someone else pointed out, perhaps some divine intervention by his recently deceased wife's spirit?
Whatever it was, it certainly added a huge "WTF?" element to that scene.

Indian, Butcher, Beautician, Solverson. I think that's who saw the UFO and survived the night.
I'm guess one or two of them won't make it through the finale. Solverson will be the only sane person left, no matter who dies next week. So... "Two local nuts and a police officer report seeing a UFO yesterday evening..."

I don't remember for sure, but did Ted Danson also see the UFO? He got shot, but was still alive and may yet survive.

Yes, Hanzee will either die or be on the run, so won't be available to give his version of what happened. Peggy is so batshit insane that nobody will believe her even if she does survive. Although I am now pulling for Ed and Peggy (after wanting them to die in the first few episodes), I have a bad feeling that Ed is not going to make it, and may be cast as the tragic hero, his tragic flaw being his devotion to his crazy wife. So, that would leave Lou and Peggy as the only two surviving witnesses, with both of them possibly lacking credibility due to his being choked at the time and her being crazy, but enough to get the UFO into the book being narrated.
It just occurred to me that Peggy is the only witness to Rye's UFO sighting in the first episode, also, although I don't think it's ever been made clear to us that she saw the UFO herself on that occasion. Maybe she survives to tell the story of both sightings, which is how Rye's sighting made its way into the story, with Lou's confirmation of her version of the 2nd sighting giving her enough credibility to include both in the book.

RIGHT.
I don't see what all the consternation is about the UFO. UFOs were a big part of the 70's culture and even if this doesn't play into the storyline it somehow captures the time period. From Star Wars, Space 1999 to Close Encounters of the 3rd Kind (the UFO in Fargo has the feel of this movie) and Alien (1979). UFOs were part of Pop culture in the 70s. I think the juxtaposition of the UFO at he gun fight was crazy fun. and Peggy matter-of-factly moving Ed along was hilarious.

When Lou was talking to Billy Bob in season one he talked about an animal in Sioux Falls. I guess Bear was the animal.

Quick question. Someone may give me an easy answer and I missed something but why did Bear leave Hanzi rear guard to protect Floyd? Is it as simple as him just wanting his best man with his mom?
In the moment it just seemed strange that he'd leave their killing machine in the rear when going into a gun fight.

Yeah, bear sees hanzee as family. He did all the legwork to get them to Sioux Falls; bear wanted him to be rewarded, and in the situation something went wrong, your best man is protecting the matriarch, I guess.

He wanted to kill Dodd and didn't want Hanzee interfering.
