MDS, that drink is generally just called a Buck. Spirit, bitters, and ginger ale.

Anything is doable but I associate Captain with more of a spiced flavor. What you want in a dark and stormy is a nice interplay from the molasses sweetness of a dark rum (like Gosling's) and the spice and effervescence of a great Ginger Beer. Spice and spice wont work as well.

interesting and very informative point. I was about to respond with "sure" to his question, and now I feel like a dumb arse

+1 on the Ron Zacapa. Finishing up a bottle of Angostura 1918, will probably go with Flor de Cana next...I like ice, rum, & lime, preferably drunk under a slowly rotating ceiling fan while wearing linen.

I am not a rum aficionado by any means, but I do enjoy it on occasion.

If any of you travel near Lacassine I recommend calling Bayou Rum for a tour and tasting. It's handcrafted rum facility and they packaged it beautifully. Tour takes about 20 minutes then they let you sample. They have dark, spiced, white and a citrus.

I may be in the minority but I did not like the Bayou Spiced rum. It has an aftertaste that is extremely bitter to me. I stopped there and have not tried any others. That dark and stormy does sound good.

I confess we've only used the spiced to cook with; lots of peach and strawberry shortcakes this time of year, only we use that years old river road rum cake recipe. If u have leftover rum u won't drink:

1 box moist yellow cake mix
1/2 cup cornstarch
1/2 cup each water, rum, oil
4 eggs; mix thoroughly and bake in bunt pan an hour; when baked pour sauce of stick butter, cup sugar and rum that's boiled a bit over cake in pan. You wouldn't use the OPs rum for this; would be sacrilege.

Someone left a half bottle of Bayou spiced at my house last November, and it's still sitting around. Not a favorite for drinking, but certainly fine to make a rum sauce for bread pudding, use in bananas foster, etc.

My two favorite rums are:

#1

#2

Malibu just came out with a 70 proof dark coconut rum that is pretty good.

My favorite rum drink is the Painkiller!

If you're gonna use fresh squeeze lime juice, why on earth would you used bottled sour mix? Just replace your sour and lime juice above with an ounce of lime juice and maybe a 1/4-1/2 oz of lemon juice and some simple syrup

Good question with a very good answer. The sauza mix is not as sweet as simple syrup and doesn't contribute to an overly sweet drink. Lemon juice would contradict the Aperol and make the drink bitter. This drink is balanced and refreshing. The amount of mix is marginal compared to the rest of the ingredients but compliments them well. I'm not one to reinvent the wheel. If a company makes a quality product, then I will use that product without pretension.

My aunt is from the Dominican Republic. She introduced us to Brugal. We drink it with a little orange and pineapple juice. Some of the better ones you can drink on the rocks!

I have not heard of Buffalo Rock GA. Where do you get this? I would like to try it

It is bottled in Birmingham, AL and very popular here. I know you can find it in Mobile and down in Orange Beach. A lot of people prefer Fever Tree or Barrett's Ginger Ale, but Buffalo Rock is priced like a 12 pack of cokes, so it wont break the bank.
