I would offer M*A*S*H, Season 2, Crisis - they run out of supplies, have to double, triple up bunking to save heat, they have to burn everything that doesn't move or salute and use up all available paper for TP. Brilliant comedy about human beings in collective survival mode.
And, of course, The Shield - Pilot. A well-executed, non-traditional police procedural with Vic Mackey, "a different kind of cop" doing a completely illegal interrogation to save a child in the key scene. There is also the raid at the end that sets the stage for everything significant that happens over the balance of the series.
The finale of The Wire is truly excellent as well, one of the best, engaging "closing montages" of any television series, particularly a dramatic one. (And same director as the Shield's Pilot, Clark Johnson).
The pilot of 24 was excellent.
Consensus favorites from old school television would be "Lucy Does a TV Commercial" from I Love Lucy - which is really timeless, as well as "Chuckles the Clown" from MTM.
Seinfeld's - The Contest, is, likewise, timeless.

Agreed, and I almost threw a shoutout to the final montage of The Wire, but since it's an episode thread, I left it out. But that closing montage is flat out amazing.

And more praise by me for Clark Johnson - I consider The Shield and The Wire as the gold standard for Pilot/Finale combos - and for this thread, I nominated The Shield's Pilot and The Wire's finale - but Clark Johnson directed all four of those episodes, which I've stated on many occasions puts him in the running for both - GOAT television director and Most Underrated television director.
And a damned fine actor in what I've seen him in (he played Gus in Season 5 of The Wire).

Cheers - Pick a Con...Any Con Harry the Hat helps coach get his money back from a con. So many great moments from Cheers but i always think of this episode.
Star Trek - The City on the Edge of Forever I've always liked Time Travel and alternative histories, inevitable contradictions aside. This is one of the best alt histories i've seen.
Star Trek - Balance of Terror Brilliant, tense episode. Star Trek at it's Best
Star Trek: The Next Generation - Q Who Q introduces the Federation to the Borg.
Star Trek: The Next Generation - Yesterdays Enterprise Another take on time travel and alternative history since its alters a fictional history. This the episode that got me hooked on TNG.
The Sopranos - Pine Barrens Surprised this wasn't metnioned sooner, but great episode.
Seinfeld - The Boyfriend So much greatness in this episode, Vandalay Industries, the JFK spoof, debating favorite explorers. "Desoto?" "Discovered the Mississippi" "Oh yeah, like they wouldn't have found that anyway"

Here's one that most of you wouldn't probably pick, but it was a great single episode and just happens to be the first one of that show I watched. I was instantly hooked:
Magnum P.I. - Home From The Sea: Magnum's tradition of spending the Fourth of July alone at sea turns to a life-and-death battle when he's capsized, and a current takes him further and further from land. He uses his memories of family to keep himself alive while Higgins, T.C., and Rick begin to search for him.
It really showed a lot of back story on Magnum. I always thought the show was beefcake drivel/prime time soap opera. But it was actually a gfreat show with tons of action, good stories, great continuity, and interesting characters.

Speaking of that, I always loved (and remember for whatever reason) the episode where everybody gets sick and starts de-evolving. Always thought that was a cool arse episode.
Also, I'll add to my list a couple of Scrubs episodes: My Lunch and My Screw Up. Both are incredible performances from John C. McGinley, and the perfect music to accompany the episode's highpoints (lowpoints).
