Fish sauce. Who uses it and on what?

I never have, but would like to try it and add it to the arsenal.
Can you water it down for a stock?
Does it have a very strong fish flavor? Salted?

I use it in a bunch of stuff. I usually add it when I taste something and can't figure out what it needs. A few dashes of fish sauce seem to always do the trick.

I use some when braising greens.
EVOO/chili oil mix, garlic, onion. Toss in greens. When they need some liquid, add some fish sauce. Let cook out. Add some white wine when need next infusion of liquid for the braise. Money every time.

Use it all the time....when you need a salty, savory note in a dish, add a few shakes. It's akin to Worcestershire in delivering the umami/glutamate flavors that contribute to a rounded flavor.

It has a lot more depth than soy sauce. Definitely umami, though.

I've found that I like the Red Boat brand the best. The higher grades of fish sauce have the word "Nhi" on the end "Nuoc Mam Nhi" and come from the island of Pho Quoc. Also, the 40 N is a measure of the protein content.
It's not as fishy tasting as you would think. A little goes a long way though.

I make a 1/3 1/3 1/3 mix of Fish Sauce, Olive Oil and Thia Chili sauce that I put on my Brussels sprouts and then roast.
I also make a sauce that goes over most any asian rice based dish.
Sauce
1 cup water
1 cup sugar
1 cup white vinegar
1/2 cup fish sauce
1/4 cup chopped garlic
1/4 cup chopped thai chilies
1 1/2 cup Mae Ploy chili sauce
Place water, sugar, fish sauce and vinegar in bowl. Whisk until sugar is completely dissolved. Add garlic and thai chilies to the mixture and whisk until both are well dispersed. Add mae ploy and whisk until combined with mixture.
Here is the entire recipe for the rice meshi dish. If you're ever in Austin, go to Paul Qui's East Side King and get this dish.

Stir fry veggies - love it with sauteed broccolli. Just a dash though, you don't need much at all.
