I probably haven't seen as many of his movies as others, but I'll go with Hoosiers. Sports movies don't get much better than that. Hell, movies period don't get much better than that.

I loved Behind Enemy Lines with Woody Harrelson. It was about an intel mission gone wrong and a plane getting shot down. Will Smith was the bad guy and Keanu Reeves basically saves the day by finding that old spark he had for competition. Hackman was incredible in it. So was Mel Gibson.
