Fried rice

Not really sure why it sounds so good but after Christmas I plan on making some fried rice and teriyaki chicken. Give me a little insight and maybe a few pointers please if any of y'all cook it on the reg! Thanks and have a Merry Christmas!

Cook your rice (I prefer sushi rice) well beforehand and throw it in the fridge for an hour or so, let it cool. In a wok, throw in some sesame oil and bring to a medium-high heat. After it's hot, throw in minced shallot, garlic, and yellow onion along with a sliced chili pepper if you like some heat. Cook until tender and then move it over to the edge of the wok. Throw in a couple of beaten eggs and, when cooked, incorporate it back into the mix and add your carrot/pea mix (if you even want it). Then, add some butter to the wok and throw in your rice and incorporate everything well. Dash with soy sauce to taste and chili oil if you like a little extra heat.

The only thing i do differently is add some finely grated ginger to my onions and garlic mix. I also throw in my red pepper flakes and schezwan pepper corns while they are sautéing.
I like soy sauce on mine, but I find that oyster sauce completes it for me. Really love the oyster sauce.
My kid loves the Chinese place down the street. I save the little boxes of cooked white rice that no one eats and use it for fried rice. It's perfect serving size for two people.

Or throw it in the fridge/freezer until it's nice and cool. But ideally, cooking it the day ahead of time is the way to go. I never plan that far ahead

Is there a good way to fry it without a wok handy? Or is it worth just going ahead and purchasing a wok?

I do Kimchee fried rice which is stupid simple and blows any other fried rice away. I slice up super thin onion and jalapeno to mix in and then throw in fresh mint, cilantro and basil.

Better with a wok, but you can substitute a big pot.
I would get a wok though. When you learn to cook with it, you'll love it.

I use a big frying pan and works fine. Just need to have the surface area. Biggest key is cook the rice beforehand and refrigerate it.

I just use a big non-stick frying pan for mine. I need to get a legit wok and start doing more stir fry.

I always add a teaspoon.
