I'm A Convert - Potato Salad in Gumbo is Delicious!

Had to go down to Houma on business this morning and the folks I met with recommended A Bear's for gumbo for lunch. The shrimp gumbo came out with rice in the bowl and a ball of potato salad on the side. Recalling the numerous posters on here raving about PS in gumbo, I gave it a shot.

It was great! Much better than I would have imagined.

I think the style of PS has to be just right - it was very basic, just potatoes, mayo and there must have been a touch of mustard because it had a slight yellow tint. I don't think I would have liked it as much if the PS was tart or had crunchy vegetables or pickles in it.

yeah I like to get some PS on the spoon and dip it in the gumbo. Good stuff. It doesnt replace the rice for me though.

Exactly. That's the way we do it at our annual gumbo tailgate.

yeah it is. Especially if the potato salad has celery in it.

I've never had that outside of Ascension Parish (my Aunt makes it that way), but it's a good change of pace. I prefer my potato salad on the side rather than in my gumbo, but it's pretty good that way too.

I peeled baked sweet potato is better. you need to try it.

My mom's method is not potato salad but to slice up boiled egg onto of her gumbo. I enjoy that as well.

My mom drops a potato in her gumbo when she adds too much salt. One time, she was out of potatoes, so she just added a raw egg and boiled it in the gumbo. It was amazing.

I barely boil eggs,peel them and put them in the gumbo to cook. Quite good.

My wife is from Houma, they have converted me. Any gumbo I've made over the last year I also made tater salad

Another variation is to mix a bit of horseradish into your individual dish of potato salad on the side. Trust me. The extra zing is incredible.

Eat some of the gumbo and potato salad on their own.

Then add the PS to the gumbo halfway through. Good eating!

Anyway.....onto A-Bears and Potato salad. Houma potato salad is pretty plain. Boiled potatoes, boiled eggs, mayo, mustard, salt and pepper. To get it yellow you take out the yolks and mix it with the mayo and mustard then pour that over the potatos ans chopped eggs. Goes great in a gumbo, been eating it like that for 37 years.

As far A-Bears they have some good food. The service though, its like you made a bet with your sibling, they lost and have to serve you. They do it, but they really arent personable about it.

Stad, next time you in the area check out Big Mikes. He has some excellent bar be que.
