You use either the back fat, more fat less meat, or belly fat, more meaty. For oil we start with canola but I know people who start with water.
As far as extras get one of these.

Get pork belly and cut into 1 to 1.5 inch cubes. Put in the pot and add enough water to almost cover. Cook out the water and you'll have rendered enough fat to fry in at 325+. When golden, pull, crank the heat to 380+ and put the cracklings back in for a minute or so. Pull, drain and season with your fav creole or cajun seasoning.

Jambalaya is awesome…..dude is trolling. As far as frying fish, a 15 gallon pot may be tad bit big for that….lol.
Get you a good stainless paddle as mentioned above and a cadillac burner and you're good to go. A pot that size is perfect for a nice sized jambalaya and/or cracklins.

Well I finally got the Jambalaya setup. It is this setup LINK
It came with a crappy regulator. Should I get the 30psi regulator to go with this burner/setup?
To season I think I am just going to use oil and and possibly bacon fat. Any suggestions for a pot this size?

Get 5 gallons of oil and a few whole chickens.
Brine the chickens
season liberally
fry them whole (6 min pound)
Good way to start the seasoning process and have some good grub
ETA; That's pretty high for a burner like that. I was in Ace yesterday, $75 for that burner. $160 with the pot.

I don't run a regulator on mine, just control with a needle valve at burner. No issues and don't have to worry about regulator not working.

Thanks guys. I am originally from Indiana but live in Colorado now. I actually have the 15 gallon setup and bought it locally on Craigslist for $120. I will mostly you it for jambalaya pastalaya and maybe try to make cracklings. I will probably upgrade my regulator once I have some experience with it.
Anyone else live in Colorado?
