Silverado feeling sluggish

I have an 07 silverado with the 4.8 liter V8 with 140k miles. Lately I have noticed it feels sluggish when I step on it. I can't even turn the tires over on a wet road when I floor it. No check engine light on or any indicator lights.
Where do I even start without bringing it in and getting charged out of the arse for it?

A general tune up is easy to do in a day and is a good start. At 140k, you need it

Speaking of this, check engine light came on today. I'm thinking it's fuel filter. If I bring it into pepboys or Firestone, how much a good tune up gone cost me? I'm at 226k

I'm sure you're due up for plugs and wires at that point. Might help and might not. Change the fuel filter, check the air filter, etc. you probably need to do all that anyway. Should all be pretty easy to do.
If that doesn't fix it you're going to have to do some troubleshooting.

What brand of fuel do you normally use? If it's "whatever is cheapest", you might want to rethink that.

Yall do realize Autozone will run diagnostics on a check engine light for free, right?
I know, Autozone sucks, but I'm not sure if other stores like them do this or not.

There is a solenoid that has something to do with the gas overflow that causes alot of check engine lights with these trucks.

I noticed recently a delay between when I would hit the gas and when the car took off. It felt like it would think about stalling and then pick up. It turned out to be a dirty fuel filter

the 4.8 did not have the AFM lifters. You're either having a fuel delivery problem or the MAF meter is dirty as VG recommended earlier.

I used to do the throttle body on my 5.3 every 15,000 miles, and it was always dirty. I'd swap new paper filters in at that time too. Aggravating as hell

Yup, they'll get so dirty it affects idle quality and will turn the check engine light on. I need to service the wife's Tahoe now...
