dinner ideas for the week

After an almost month long haitus of being in the kitchen due to after hours meetings and family emergencies, I finally have time to get back in the kitchen after work.
Tonight is pineapple shrimp fried rice. I need help with the rest of the week. What are some of your mid week dinner ideas.

My weeknight meals vary a lot. I sometimes eat things I've cooked and frozen. Last week, I made a good tortilla/tamale soup that I had a few nights. Had a steak and corn and tomatoes another night, I think. One night, I just had corn and fried green tomatoes.
On weekends, I sometimes cook a roast or something along those lines that we have a few nights either with rice and gravy or in poboy form. I can only eat leftovers so many times, but I do eat them.
Slow roasted salmon and roasted veggies is an easy meal. Having some leftover smoked chicken, fresh corn pudding and sliced homegrown tomatoes with some lima beans this evening. Probably having chicken salad tomorrow with hard boiled eggs and sliced tomatoes. I'm not a chicken fan, but I like the Neiman Marcus chick salad recipe. It's a good summer meal.

Big meals, then leftovers. I'll probably make a gravy or some red beans at the beginning of the week that will last me until about Wednesday. Typically Friday night I'll dine out with friends. Thursday is typically a fun day, I'll pick something different to prepare that maybe I've never tried before or an old favorite. It's really the only evening where I really have to think, but I enjoy that.

I still have leftovers for tonight. I get fed at a work thing tomorrow night. I'll probably do a frozen lasagna Wednesday night or something.
I had the idea of maybe shredding some gator sausage and pepperjack cheese on top of the lasagna. Do you think that's a good idea?

Most of my meals are either simple grilled/baked stuff or crock pot recipes:
Red beans & rice
hot dogs & chili (or just chili)
grilled fish
baked fish
burgers
grilled chicken sandwiches or salads
slow cooker pulled pork (haters gonna hate)
baked frozen/stuffed chickens
roast, rice and gravy
rotisserie chicken
brinner
When I get slow at work, I like to venture out to meals that take a little more prep time:
homemade spaghetti
homemade jambalaya
stuffed bellpeppers
various homemade marinades for grilled meats
gumbo
etouffee
I'm still a rookie though so I don't go too crazy
ETA: last night was brinner. tonight/tomorrow is spaghetti that I cooked last night. Wed/Thurs will be stuffed/frozen chicken. TBD on the weekend.
