I will keep one next time and broil it or bake it. We did the lake trout buried in sand under a fire in Canada. Pretty good

I will normally pan fry trout in butter with salt, pepper and thyme. That's it. Just a little butter and after a little lemon juice. The more simple the better.
Also will smoke it and put it in a dip with cream cheese, lemon juice, and dill.
And you can differentiate a trout from a char by its skin and spots.

I've never eaten a Brown. They have to be 24" where we fish and unfortunately I've never gotten one over 21-22". But they are fun as hell to catch.
Fresh trout fried in bacon grease... not to mention the bacon sammiches where the grease was produced. Baked beans and Roger's secret taters. More clean livin'... and clogged arteries.

Specks, croaker, reds, and black drum are all from the same family.

Now PLEASE don't tell me a green trout ain't a trout but it's in the drum family!

I just found out folks eat croaker. It's always been throwback or bait for me.
