I would put trout closer in taste to salmon. It has a pinkish type meat.

I've never discriminated against the white trout. They fry up nice. I was never aware that croaker was good. I'll start keeping the bigger ones and try them.

Spec tastes better, better texture
Rainbows, never developed a taste. Don't fight as good either...

Croakers are great. My dad always called them "bacon of the bayou". They fillet real easy and taste great.

White Trouts are great if eaten fresh. Hell, I've seen people turn their nose up at Ground Mullets. Thats damn good table fare too.

agreed, but try putting them up frozen dry, ie not in a ziplock filled with water. i found they kept better. not great, but better.

Vacuum seal dry with food saver is key to the frozen fish kingdom. You just gotta be willing to fool with the machine and etc.
