re: Why doesn't Louisiana really have it's own barbecue culture?

West coast> east coast bruh
Eta...I'm not arguing either is better than the gulf, just that west, NW to be specific, is better than east. I include Alaska when I say West coast although only king crab is about the only thing we don't have.

i'll give you that some places on the east coast have some good seafood but your claim is still hilariously incorrect.

East Coast seafood can't touch crawfish.
Maybe it's because I'm from NOLA but while I appreciate good BBQ I don't have to have it. I boiled crawfish or shrimp or crabs every weekend I could when I lived there and would much prefer to do that than have BBQ

maybe you think this because, being from the east coast, you think 'seasoning' food begins and ends with salt, pepper, and (maybe to the adventurous east coaster) lemon.

Bc we have cajun food
And French Creole, and very abundant seafood....
Its a no brained why we gravitate to what we do versus just meat grilling alone.

cochon de lait is definitely a unique louisiana take on BBQ. i do agree with you though, i am surprised that the cajuns don't have their own sauce or anything else to go with it. but damn a cochon de lait sandwich with stubbs.

No one can touch the way LA cooks their seafood. FACT.
We have great seafood to choose from here locally but it just isn't done the way I prefer. That's why I always do seafood at home.
