I base my starter size on the OG of my beer. During the summer I use bigger starters due to awful conditions when shipping the yeast.
btw I use the 10 ml water to 1 gram dme ratio bottomland mentioned.

I'm going to use store bought lacto (Wyeast 3191 - Berliner Blend). I've had excellent results with the Wyeast Roselare blend so I thought I'd give this one a shot.

All finished up. Ended up at 73% brewhouse efficiency. Not as good as last time, but still a couple points higher than normal. I think my new mashtun manifold is doing it's job. better than my old steel hose.

10 Gallon pot. That's just a hair over 9 gallons in the pot. I do 90 minute boils and usually end up with around 6.1 gallons in the kettle. 5.25 gallons goes into fermenter, a liter goes towards a a starter, and the rest goes to compost due to whirlpooling.

Similar to what my last brew was. 9 gallons, 2 liters to a starter so 8.5 in kettle, 90 minute boil and 6.5 to carboy.....you lose a lot in the boil. I would've thought with the humidity down there, you'd lose less than me.

I do no-chill and boil it like motherfricker to get any DMS out of there. I ain't smart enough to figure out boil off rates with humidity as a factor. Well, I hope I am smart enough, but rather I'm too lazy. It ain't broke, so I don't fix it.
