Larb, laarb, lahb, larp, ... Thai meat salad WITH PICTURES

Tonight's supper is a Thai dish which goes by different spellings. It can be made with ground pork, ground beef, ground chicken ... many variations. The recipe I used today is Laab
The ingredients (most of them):
Brown the ground pork that you've marinated in lime juice:
Toast raw rice in a skillet. I had basmati.
I wish you could smell how fragrant it became as it toasted:
Finally, golden brown:
Now you've got to use a mortar and pestle:
And grind it up, but not all into a powder. Various textures are good, comme ça:
The ground pork goes into a bowl. Add the fish sauce, the chopped shallots, cilantro and chili and most of the toasted ground rice. Mix it all together:
It can be served with sticky rice, but I like to use cabbage. If only you could taste what the combination of flavors is like!

Did you dry-toast the rice, or is there at least a little bit of oil? Not that you are trying to make fried rice, but...?

G Vice, I dry toasted it. Previously, I bought some toasted rice at one of the Asian markets. This was the first time I toasted it myself. I hate to brag, but it is awesome! I think toasting the basmati (I thought I had jasmine) made the whole dish.

Coater, I will probably do another Thai dish soon. While I have fresh lemongrass, galangal, and kaffir lime leaves, I might as well go all out. I think I used some of those in a previous laarb recipe, not sure.

impressive! we're going to a thai dinner tomorrow night which should be interesting. a thai chef is coming to one of our friends' home and will be cooking several courses. i'll try to sneak some pics without looking like a big ole' food nerd.

Garlic is in the picture, but I didn't use it. I did use Thai chiles. I used to call them Thai bird chiles, but the lady in the Asian market repeated it, looked at her friend and actually laughed at me. Then she repeated it again, and laughed harder.
It kind of pissed me off, but I bought my stuff and left. I don't like being laughed at.
