I filled one with carmelized shallots and sautéed yellow squash the other day. It was very good.

Definitely misinterpreted this on first read.
Omelettes are a great way to experiment with leftovers. I know that most people add some sort of cheese. When I was allowed, I used finely grated Swiss.

I think I will. You have me interested.

Onions and potatoes are about as far out as I go and not too often. Usually, it's just chives or green onions, but I don't eat them often. I'd just as soon have scrambled eggs with the same ingredients.
I'm one of those annoying people that doesn't like onions unless they are in gumbo, stew, jambalaya or something like that where the onions are cooked down. I can't stand to bite into a raw onion.
I like to sauté some Jimmy Dean hot sausage and bacon in butter to put in mine. I'm a meat and cheese girl. I definitely would like spinach leaves and jalapeños though.

I know someone else like you. I hide the onions when cooking for him and he's fine with that IF he can't find them.

Like I said, I'm fine as long as they are cut small and cooked down. If I bite into a big chunk of raw onion, I want to

I'm not a big fan of the taste of green onions in some dishes. I think they have a very over powering taste sometimes. I don't think I would like them in eggs.

I have a green onion addiction. I'll slip them in anywhere I can and especially raw or just barely cooked. It's really a serious thing.
I love tomatoes on the side with an egg dish, preferbly raw sliced, baked halves or roasted.

I'm like that with garlic. I put garlic in almost everything I cook. I love the smell of it.
I like tomatoes on the side with an egg dish also. I will also eat whole tomatoes out of the can when it isn't gardening season and my dad doesn't have any fresh tomatoes.

My onion addiction is red onion. I want cooked onions in the dish and raw red onion, too. I am onion crazy.
Lately arugula and onions need to be in EVERY salad and or wrap. And fresh dill.
Maybe I can start an ingredient addiction thread?

You can have my share of onions.
This seems to be a very popular combo.

I know this will sound extremist, but smoked salmon with a filling of cream cheese/whipping cream blended together....top with chives and caviar ............ amazing even for someone who would rather eat pulled pork and hush puppies

What do you like in your omelettes? I'm going through an omelette phase right now. I'm simple though. I like mine with bacon, sausage, and lots of cheese. I've never had an omelette with seafood. I hear they are good.
I have several different varieties. Shrimp in an omelette is quite tasty.
Green onion, tomato, mushroom, cheese, and zucchini is one of my go tos.
